Not all wood is fit to use in all types of oven, and more importantly, not all woods contribute a savoury cooking flavour to your pizza. Laminated woods, pressure treated woods, painted wood or any wood that has been treated with chemicals is not suitable for your pizza oven, as these hazardous chemicals can be toxic
You should also avoid logs that have a high sap content, such as pine. Sap produces soot and creosote, which will coat the oven floor and damage your pizza oven.

Knowing what type of wood you can’t use is one thing, but how do you decide which you can use? The beat logs for cooking are seasoned and dried hardwoods, or kiln dried logs. Many log delivery companies will stock logs such as these.
Hardwoods are better for cooking in pizza ovens as they are cleaner and last longer than softwoods, so you won’t find yourself topping up the logs every 15 minutes. Kiln dried logs are also perfect for pizza ovens, they have been dried out so they have a moisture content below 20%. This will mean they burn hotter and for longer, which is ideal when you’re hungry and want your pizza in and out of the oven pronto.

Fruitwood comes, as the name suggests, from fruit bearing trees. Fruitwood such as logs from apple, cherry, plum, pear, and apricot trees can add tonnes of flavour to your next pizza.
